Turkish Eggs with Asparagus

Turkish Eggs with Asparagus

These Turkish Eggs with Asparagus are the perfect weekend brunch. It might sound like an odd combination, but once you’ve tried it, you will be hooked. Creamy, lemony with a touch of garlic and a fiery red and nutty butter, topped with a runny poached egg, that invites you to dip your asparagus into it. Add some bread and you have a perfect balance of protein, carbs and veggies, all in one delicious bowl.

Strawberry Black Pudding Salad in a bowl, arranged in rows of cucumber, then peppers, followed by black pudding and strawberries, scattered with onion rings. A bottle with Almond Strawberry vinaigrette in the background.

Strawberry Black Pudding Salad

This unusual combination was inspired by a Strawberry Black Pudding salad I had years ago in a tiny restaurant in Clonakilty, right beside the butcher who makes the famous Clonakilty Black Pudding, which is arguably the best you’ll find anywhere in Ireland. With oats that get crunchy when frying and its fantastic depth of flavour. Together with strawberries, each mouthful tastes like a party in your mouth, umami, sweet and fruity, crunch and juiciness creating a very more-ish mix. It also is incredibly quick to prepare, with just a few ingredients, while giving you a great calorie vs volume ratio for weight loss and will impress your guests.

Apricot Almond Protein Oats

Apricot Almond Protein Oats

A decadently creamy, fruity, fragrant bowl of Apricot Almond Protein Oats, that will remind you of that lovely Apricot Almond tarte you tried in France. Ready within about 15 minutes. Dessert for breakfast, guilt free. It also keeps you full and satisfied for hours, with a low-calorie count due to the high fruit content and unsweetened almond milk. Did I mention no added sugar?
