Were you ever looking for a protein pancake recipe that’s easier than…well…pancakes? German Pancake with Protein is it! It comes together in a blender within minutes and gets baked in the oven, puffing up to an impressive height and tasting just incredible with crispy edges and soft, spongy middle. If there are pancakes in heaven, I’m reasonably sure this is the one. And did I mention it has added protein?
Eggs, flour, protein powder, Oat milk (or any other full fat milk/plant milk), salt, olive oil, butter.
Add all ingredients except the butter and olive oil. Blend well. I found a high speed blender like Vitamix gives you the crispiest pancake.
Pre-heat oven to 450°F/225°C, adding your cast iron pan to heat with it. One both are hot, add first the oilve oil, the the butter to the pan to melt.
Briefly remix the batter and pour straight into the hot pan. Transfer into the hot oven and bake for about 18min, turning once, until golden brown and puffed up.

I love mine with icing sugar, mixed fresh berries and some kiwi for a particularly colourful start of the day.
