Description

This Whipped Honey Cranberry Butter With Orange and Rosemary is the perfect accompaniment for my Cranberry Buckwheat Sourdough Bread with Rosemary and Pumpkin Seeds. Or any other bread you might happen to have. It’s also amazing on meat, especially game, adding that sweetness you’d usually get from cranberry sauce, but creamier.


Ingredients

Units Scale
  • 1 cup butter (2 sticks)
  • 1 orange (zest only)
  • 1/4 cup honey
  • 2/3 cup cranberry sauce
  • 1 tbsp chopped Rosemary (fresh)
  • Pinch of salt

Instructions

  1. Add all butter to the bowl of your food processor or stand mixer, whip for about 5min until light and fluffy.
  2. Add cranberry sauce, pinch of salt, honey, orange zest and rosemary and mix until well incorporated.
  3. Taste for seasoning. Add honey or more salt, according to your preferences.
  4. Store in the fridge for up to 2 weeks or outside in a covered container for up to 3 days.
